  • 28.35 grams Chef's Pass Quick Pickling Brine

  • 1.0 lb Onions

  • 2.0 tbsps Adobo

  • 56.7 grams Adobo


Pre-heat pan over medium-high heat. Rub the chicken thighs with adobo, salt, and pepper. Sear the seasoned chicken until fully cooked, around 4min per side. Wrap in aluminum foil and let it sit. In a microwave safe bowl mix the onions with the Quick pickling Brine and toss to evenly coat. Cover and microwave in burst of 1min for 4min, stirring in between. Once the onions are cooked chill in fridge. In the same grill pan where you seared the chicken, grill the tortilla over high heat. Once a little char mark is made, layer two tortillas and build up with all the ingredients.
