Directions

Pre-heat a large pan to medium-high heat. Peel and slice the onions evenly. Toss sliced onions with the Caramelized Vegetable Reduction until evenly coated. Cook over medium high heat for 5min, stirring occasionally to prevent burning. When onions become translucent, add the wine and cook until syrup consistency. Pour onion mixture into a large pot and add the consommé, chicken broth, apple cider, and herbs. Simmer 15-20min. Cut bread into rounds, brush with oil, and broil them until golden (around 1min) Season the soup mixture with salt, pepper and cognac (optional). Remove the herbs. Place the soup mixture into heat resistant soup crocks, top with bread rounds, grated cheese. Broil until cheese is bubbly and golden, 1-2min.
